PORK BUCCO

Basically, a leg of pork/ham cut in thin slices with the bone remaining.

Keep in mind

Pork bucco is a tricky cut and is not suitable for the barbeque because the different, thinly sliced muscle groups around the bone cook at different speeds.

How to cook pork bucco

Pre-marinated versions of this cut, for grilling, are even less attractive.

The classic

Put some tenderloin or prime ribs on your barbeque instead.
