The other day I made an amazing Osso Buco with all the trimmings. However, the recipe said "white celery" but all I could find was the usual, green kind. I have found out that the whiteness has to do with the stems being buried underground (or something of the sort), but is this a product that still exists on the market? If so where and what season? Does it have a different taste?

White celery tastes similar but sweeter and smoother. I remember it from pre 2nd WEar!
Grown in wet land and wrapped in paper to keep clean before earthing up to leaves in blocks Seedlings could be sent away for ready sprouted early in year. That was how it was grown by amateurs
