LUMPFISH

A fat fish with a strange appearance. It has no visible scales and has large lumps on its back and on the sides of the body. It can use its belly fins as a suction cup to attach itself to rocks. An alternative name for this fish is “lumpsucker”.

Fish facts

Probably best known for their caviar.

How to cook lumpfish

The caviar is popular but the fish tastes good too. It is hard to fillet but worth the effort.

Fennel works well as an accompaniment.

The classic

Steamed lumpfish, with fennel in one form or another.

Conservation status:

On the red list due to the demand for caviar.
