SEA KALE
Sea kale grows wild on the coast. It’s a completely natural, unprocessed variety that you don’t often find in the supermarket.

The flavor is sharp and bitter, which means it needs to be partnered with strong flavors like mustard and onion.
How to cook sea kale
Sea kale used to be used in the same way as white cabbage.
Tender stalks can be eaten raw or lightly boiled, or preferably steamed. If you don’t have a steamer, use a saucepan insert or a sieve.
Serve freshly cooked sea kale like any spring vegetable, with a little butter.
