One of the names of rötsimpa is just ”bullhead” in the UK but it could also be shorthorn sculpin or short-spined sea scorpion...

Don’t throw it overboard. It’s not famous for its looks, but the flesh tastes good.

How to cook bullhead

Turn the tasty, white flesh into soup. The fillets/pieces will tend to be small so put them in at the last minute.
