LING

Ling is a fish that lives at the bottom of the sea. It is closely related to burbot and looks like a cross between an eel and a cod. It is even longer and thinner than cusk.

Fish facts

This is a fish in the cod family, despite its different appearance. Treat it like a cod.
Pea purée works well with all white fish, especially this one.

How to cook ling

The flesh is firm and tasty and can be cooked in several ways, like saithe or cod. Ling is firm enough for fish soup.

Oven baked with tomatoes and fresh herbs.

Conservation status:

Highly endangered and on the red list, but ling from Iceland and the Barents Sea has yellow status.
