Yellow and orange tomatoes have their distinct color because the chlorophyll in the skin is gradually broken down to form beta carotene. Not lycopene, as in red tomatoes.
Beta carotene is the same pigment that you find in carrots.

The flavor is milder than in red tomatoes.

You can cook and use yellow and orange tomatoes just as you cook and use. The only difference is the color and – generally – the milder taste.
