YELLOW TOMATOES

Yellow and orange tomatoes have their distinct color because the chlorophyll in the skin is gradually broken down to form beta carotene. Not lycopene, as in red tomatoes.

Beta carotene is the same pigment that you find in carrots.

Keep in mind

The flavor is milder than in red tomatoes.

How to cook yellow tomatoes

You can cook and use yellow and orange tomatoes just as you cook and use red tomatoes. The only difference is the color and – generally – the milder taste.

Try baking tomatoes of many colors in the oven. The result is pretty.
