A fresh take on red cabbage

That long awaited christmas dinner doesn't necessarily have to be a fatty and/or stuffy affair. Here is a take on red cabbage that will be a light and irresistible break from all those other heavy dishes that have been baked, boiled, braised, roasted, smoked salted, pickled and fried:

300 gr shredded red cabbage
2 tbsp vinegar
4 tbsp sugar
1 dl water
½ star anise
zest from 1 orange

1. Make a warm syrup with vinegar, sugar, water, star anise and orange zest
2. Use a mandoline to shred the cabbage as thinly as possible
3. Just before serving, put the cabbage in the syrup and toss

If this doesn't lighten things up, nothing will.
